BOSTON CREAM CUPCAKES

Ingredients:

  • For the Cupcakes:
    • 1 ½ cups all-purpose flour
    • 1 cup granulated sugar
    • ½ cup unsalted butter, softened

Instructions:

  1. Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Make Cupcake Batter: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.
  3. Bake Cupcakes: Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cupcakes cool completely on a wire rack.
  4. Prepare Custard Filling: In a medium saucepan, heat milk until it begins to steam. In a separate bowl, whisk together sugar, cornstarch, and egg yolks. Gradually whisk the hot milk into the egg mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in vanilla extract. Let cool to room temperature.
  5. Make Chocolate Glaze: Heat the cream in a small saucepan until it just begins to simmer. Pour over the chocolate chips in a heatproof bowl and let sit for a few minutes. Stir until smooth.
  6. Assemble Cupcakes: Using a small knife or cupcake corer, remove the center of each cupcake. Fill the hole with the custard. Spoon or pipe the chocolate glaze over the top of each cupcake, allowing it to drizzle down the sides.
