  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut

Topping:

  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts or pecans**
  • 1/2 cup shredded coconut

Glaze:

  • 1/2 cup unsalted butter
  • 1/2 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the batter by mixing together the flour, granulated sugar, brown sugar, eggs, baking soda, vanilla extract, and salt in a large bowl. Stir in the crushed pineapple, including its juice, until well combined.
  3. Add nuts and coconut: Fold in the chopped walnuts or pecans and shredded coconut.
  4. Pour and top: Pour the batter into the prepared baking dish and spread it evenly. Sprinkle the topping ingredients—brown sugar, chopped nuts, and coconut—over the batter.
  5. Bake the cake for 35–40 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the glaze.
  6. Make the glaze: In a small saucepan, combine the butter, evaporated milk, granulated sugar, and vanilla extract. Bring the mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes, then remove from heat.
  7. Glaze the cake: Once the cake is done, remove it from the oven and immediately pour the hot glaze over the top. Let it soak into the cake.
  8. Cool and serve: Allow the cake to cool slightly before serving. Cut into squares and enjoy!
