Ingredients For Spinach And Feta Stuffed Pork Tenderloin
- 2 Tbsp olive oil
- 16 oz fresh spinach
- 4 oz Feta cheese
- 1 clove garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 12 oz pork tenderloin
- 4 slice bacon, peppered if you can find it
Step-by-Step Instructions:
1.Preheat oven to 450 degrees F. Add olive oil to a pan over medium heat.
2.Add spinach and cook for 2 – 3 minutes.
3.Drain excess moisture from the cooked spinach.
4.Mix the cooked spinach with Feta cheese, garlic, Worcestershire sauce, salt, and pepper. Set aside.
5.Filet the pork tenderloin tenderloin.
6.Spread the spinach mixture on the tenderloin.
7.Roll up tenderloin to enclose filling. Wrap bacon around the tenderloin.
8.Place in roasting pan. Bake at 450 degrees for 15 minutes. Reduce heat to 400 degrees F and bake until the meat thermometer registers 145 degrees
