Directions:
Prepare the shrimp:
If using cooked shrimp, chop them into bite-sized pieces. If using raw shrimp, finely chop them and marinate in lime juice for at least 30 minutes until they become opaque (for a fully cooked ceviche).
Mix the ingredients:
In a large bowl, combine the diced mango, cucumber, red onion, tomato, and habanero. Add the chopped shrimp to the mixture.
Season the ceviche:
