1. Prepare the Cream: For 1 kg of butter, you’ll need approximately 2 liters of heavy cream. Pour the cream into your large mixing bowl. The cream should be very cold, so it’s best to use it straight from the refrigerator.

2. Start Whipping: Using an electric mixer or food processor, start whipping the cream at medium-high speed. The cream will go through several stages: first, it will turn into whipped cream, and with continued whipping, it will begin to separate into butter and buttermilk.

3. Watch for Separation: After about 3-5 minutes of whipping, you’ll notice the mixture breaking apart. This is when you should see yellowish butter clumps starting to separate from the liquid buttermilk. Once this happens, stop whipping.

4. Drain the Buttermilk: Use a strainer or cheesecloth to drain off the buttermilk from the butter. Save the buttermilk for baking or drinking—it’s nutritious and tasty.

5. Wash the Butter: To wash the butter, pour ice water over it. The cold water helps to wash away any remaining buttermilk, which can cause the butter to spoil faster. Knead the butter in the ice water, then drain. Repeat this process until the water runs clear.
