Crockpot Chile Verde

Tender Pork Slow-Cooked in a Flavorful Green Chile Sauce for a Comforting and Easy-to-Make Meal

Ingredients

For the Chile Verde:

  • 2 ½ lbs pork shoulder (or pork stew meat), cut into chunks
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1–2 roasted poblano peppers, peeled, deseeded, and chopped (or canned green chilies)
  • 1 cup green chile salsa (or roasted and chopped fresh green chilies)
  • 3 large potatoes, peeled and cubed
  • 2 cups chicken broth (or vegetable broth)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tbsp olive oil (for browning the meat)
  • Salt and pepper, to taste

For Serving and Garnish:

  • Fresh cilantro (optional)
  • Warm tortillas
