Ingredients for Meatballs:

  • 1 cup of bulgur

  • 1/4 cup of fresh parsley, finely chopped
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Ingredients for Yogurt Sauce:

  • 1 cup of plain yogurt
  • 1 tablespoon of olive oil
  • 1 clove of garlic, minced
  • 2 tablespoons of fresh mint, chopped
  • Salt to taste

Preparation Steps:

1. Prepare the Bulgur: Start by soaking the bulgur in hot water for about 20 minutes, or until it’s soft. Drain any excess water and set aside to cool.

2. Make the Meatball Mixture: In a large mixing bowl, combine the soaked bulgur, ground meat, onion, garlic, egg, parsley, cumin, paprika, salt, and pepper. Mix well until all the ingredients are evenly distributed.

3. Shape the Meatballs: Using your hands, form the mixture into small, round meatballs. The size is up to you, but smaller meatballs cook more evenly and are perfect for serving with a dip or sauce.

4. Cook the Meatballs: Heat a non-stick skillet over medium heat. Add the meatballs and cook, turning occasionally, until they are browned on all sides and cooked through. This should take about 10 to 15 minutes.

5. Prepare the Yogurt Sauce: While the meatballs are cooking, prepare the yogurt sauce. In a small bowl, combine the plain yogurt, olive oil, minced garlic, chopped mint, and a pinch of salt. Mix well until the sauce is smooth.

6. Serve: Place the cooked meatballs on a serving plate and drizzle with the yogurt sauce or serve the sauce on the side for dipping.
