Brown sugar hardens because it dries out after being opened. The natural moisture in the sugar escapes when exposed to air, causing the molasses and sugar crystals to harden and stick together. The good news is that it’s easy to revive. By restoring moisture, you can soften brown sugar and keep it usable. In addition, you can prevent future hardening by storing it in a tightly-sealed container or using a brown sugar saver.

How to Soften Brown Sugar in the Microwave
This is the quickest and simplest method:

  • Place the hard brown sugar in a microwave-safe bowl.
  • Dampen a paper towel (not dripping) and lay it over the sugar.
  • Microwave in 20-second intervals, stirring gently with a fork between intervals, until the sugar is soft.

This method uses the moisture from bread to restore the sugar’s texture:

  • Put the hardened sugar in a plastic container or bag.
  • Place a slice of bread on top of the sugar and seal the container or bag.
  • Wait at least 12 hours or overnight.
