I’m a little embarrassed by how much I love this dish… but it’s too delicious…
Ingredients:
Boneless, skinless chicken breasts: 4
Swiss cheese slices: 4
Deli ham slices: 4
All-purpose flour: 1/2 cup
Eggs: 2, beaten
Breadcrumbs: 1.25 cups
Grated Parmesan cheese: 1/2 cup
Garlic powder: 1 teaspoon
Paprika: 1/2 teaspoon
Salt & pepper: To taste
Instructions:
Prep the Chicken:
Preheat your oven to 375°F (190°C) and grease a baking dish.
Pound each chicken breast to about 1/4 inch thickness between sheets of plastic wrap.
Assemble:
Lay a slice of Swiss cheese and ham on each chicken breast.
Roll them up tightly and secure with toothpicks if needed.
Breading Stations:
Set up three shallow dishes.
Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Bread the Chicken:
Dredge each chicken roll in flour, then dip in the egg mixture, ensuring it’s fully coated.
Roll it in the breadcrumb mixture, pressing gently to ensure a good coating.
Place the breaded rolls in the prepared baking dish.
Bake & Rest:
Bake for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown.
Let the chicken rest for a few minutes before slicing and serving.
Serve:
Enjoy your Chicken Cordon Bleu hot, garnished with fresh parsley if desired.
It pairs wonderfully with steamed vegetables, mashed potatoes, or a fresh green salad.
Tips:
For an extra touch of flavor, consider adding a sprinkle of dried herbs like thyme or rosemary to the breadcrumb mixture.
