Ingredients:

  • Boneless, skinless chicken breasts: 4
  • Swiss cheese slices: 4
  • Deli ham slices: 4
  • All-purpose flour: 1/2 cup
  • Eggs: 2, beaten
  • Breadcrumbs: 1.25 cups
  • Grated Parmesan cheese: 1/2 cup
  • Garlic powder: 1 teaspoon
  • Paprika: 1/2 teaspoon
  • Salt & pepper: To taste

Instructions:

  1. Prep the Chicken:
    • Preheat your oven to 375°F (190°C) and grease a baking dish.
    • Pound each chicken breast to about 1/4 inch thickness between sheets of plastic wrap.
  2. Assemble:
    • Lay a slice of Swiss cheese and ham on each chicken breast.
    • Roll them up tightly and secure with toothpicks if needed.
  3. Breading Stations:
    • Set up three shallow dishes.
    • Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Bread the Chicken:
    • Dredge each chicken roll in flour, then dip in the egg mixture, ensuring it’s fully coated.
    • Roll it in the breadcrumb mixture, pressing gently to ensure a good coating.
    • Place the breaded rolls in the prepared baking dish.
  5. Bake & Rest:
    • Bake for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown.
    • Let the chicken rest for a few minutes before slicing and serving.
  6. Serve:
    • Enjoy your Chicken Cordon Bleu hot, garnished with fresh parsley if desired.
    • It pairs wonderfully with steamed vegetables, mashed potatoes, or a fresh green salad.

Tips:

  • For an extra touch of flavor, consider adding a sprinkle of dried herbs like thyme or rosemary to the breadcrumb mixture.
  • If you prefer a lower-carb version, you can substitute the breadcrumbs with crushed pork rinds or almond flour
