Mexican Chicken Taquitos/Flautas in Green Sauce
Crispy, Flavorful Rolls with a Zesty Green Sauce
Ingredients:
For the taquitos:
- 1 lb chicken breast (cooked and shredded)
- 12 small corn tortillas
- ½ cup vegetable oil (for frying)
- Salt, to taste
- ½ cup shredded cheese (optional)
- Sour cream (optional)
For the green sauce:
- 5-6 medium tomatillos, husked
- 2 jalapeños (or to taste)
- ½ onion
- 1 clove garlic
- ¼ cup fresh cilantro
- 1 cup water
- Salt, to taste
- 1 tbsp olive oil
For topping:
- ½ cup shredded lettuce
- ½ cup crumbled queso fresco (Mexican cheese)
- Additional sour cream (optional)
Directions:
Prepare the Green Sauce:
In a medium saucepan, bring the tomatillos, jalapeños, onion, and garlic to a boil with 1 cup of water. Cook for about 10 minutes, until the tomatillos soften.
Transfer the ingredients into a blender, add cilantro, and blend until smooth. Season with salt to taste. If the sauce is too thick, add a little more water to reach the desired consistency.
Prepare the Chicken Filling:
In a bowl, mix the shredded chicken with a bit of the green sauce for flavor. If you’d like, add some shredded cheese to the chicken for extra richness.
Assemble and Fry the Taquitos:
Heat the vegetable oil in a large skillet over medium heat.
Warm the tortillas for 10-15 seconds per side so they become pliable.
Spoon the chicken mixture along the center of each tortilla and roll tightly into taquito or flauta shape.
Carefully place the rolled taquitos into the hot oil and fry in batches until golden and crispy, about 3-4 minutes per side. Drain on paper towels.
Serve:
Place the fried taquitos on a serving plate.
Pour the green sauce generously over the top.
Garnish with shredded lettuce, crumbled queso fresco, and a drizzle of sour cream, if desired.
