Hatch Green Chile Pork Burritos

Ingredients:

For the Pork:

  • 2 lbs pork shoulder or pork butt, trimmed and cut into large chunks
  • 1 onion, quartered
  • 4 garlic cloves, smashed
  • 2 cups chicken broth
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 cups Hatch green chiles (canned or roasted fresh)

  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 3-4 fresh Hatch green chiles, roasted and peeled (or canned)
  • 1 cup chicken broth
  • Salt and pepper to taste

For the Burritos:

  • Large flour tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Shredded cheese (Mexican blend or your choice)
  • Optional: Avocado slices, pickled jalapeños, cilantro

1. Cook the Pork

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the pork chunks and brown on all sides.
