Mexican Pineapple Tamales (Tamales de Piña)

Tropical Flavors Meet Classic Tamale Dough in This Delicious Recipe

Ingredients:
For the tamales:

  • 2 cups masa harina
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups pineapple juice
  • 1 ½ cups finely chopped fresh pineapple (or canned pineapple, drained and chopped)
  • ½ cup milk
  • 24-30 dried corn husks (soaked in warm water for 30 minutes)

For the filling:

  • 1 cup fresh or canned pineapple, finely chopped
  • ½ cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Directions:

Prepare the filling:
In a small saucepan, combine the pineapple, sugar, cornstarch, and water. Cook over medium heat, stirring often, until the mixture thickens (about 5 minutes). Let it cool completely.

Prepare the masa dough:
In a large bowl, mix together the masa harina, flour, baking powder, and salt. Add the softened butter, sugar, and vanilla extract, mixing with your hands or a spoon. Slowly add the pineapple juice, milk, and chopped pineapple, and knead until the dough is smooth and holds together well. You may need to add a little more liquid or masa harina to achieve the right consistency.

Assemble the tamales:
Take a soaked corn husk and spread about 2-3 tablespoons of masa onto the center. Leave space at both ends. Add a spoonful of the pineapple filling in the middle of the masa.
Fold in the sides of the husk, then fold up the bottom to secure the tamale. Repeat this with the remaining husks and filling.

Steam the tamales:
Arrange the tamales in a large steamer, standing up with the open end facing up. Cover them with a damp cloth, then place the lid on the steamer.
Steam for about 1 ½ to 2 hours, checking occasionally to ensure there’s enough water in the steamer. The tamales are done when the masa easily separates from the husk.

Serve:
Let the tamales cool slightly before serving. Enjoy them warm with a hot drink or as a festive treat.
