  • For the Quinoa Burger

  • diced onion, sautéed

  • cooked quinoa
  • 2 cup(s)
  • black beans
  • 1/4 cup(s)
  • arrowroot flour
  • 2 tblsp
  • oil
  • 2 tsp
  • salt
  • 1/2 tsp
  • pepper
  • 1/2 tsp
  • garlic powder
  • 2 tblsp
  • chopped cilantro
  • 1
  • batch of chipotle aioli, see below
  • For the Chipotle Aioli
  • 1 cup(s)
  • mayonnaise
  • 1-2 tblsp
  • canned chipotle peppers (see notes)
  • 2
  • cloves of garlic
  • 1 tblsp
  • chopped cilantro
  • 1 tsp
  • paprika
  • 1/2 tsp
  • salt

Directions

  • Step 1
  • Make the quinoa burger patties. In a large bowl, combine onion, quinoa, beans, arrowroot flour, oil, salt, pepper, garlic powder and cilantro.
  • Step 2
  • Mash all the ingredients together by hand. The black beans should become pasty.
  • Step 3
  • Form sliders into three-ounce portions.
  • Step 4
  • On medium heat, pan-fry or grill your patties 4-6 minutes on each side until caramelized and golden brown. Set aside.
  • Step 5
  • In either a food processor or a blender, mix the mayonnaise, chipotle peppers, garlic, cilantro, black pepper, cumin, paprika and salt until aioli reaches a smooth consistency. Set aside.
  • Step 6
  • Serve each quinoa burger over crisp lettuce, topped with chipotle aioli and avocado. Enjoy!

Notes:

The heat of the chipotle aioli can be adjusted by the amount of the canned chipotle peppers you use.
