Quinoa Burger Recipe

- For the Quinoa Burger

- diced onion, sautéed

- cooked quinoa
- 2 cup(s)
- black beans
- 1/4 cup(s)
- arrowroot flour
- 2 tblsp
- oil
- 2 tsp
- salt
- 1/2 tsp
- pepper
- 1/2 tsp
- garlic powder
- 2 tblsp
- chopped cilantro
- 1
- batch of chipotle aioli, see below
- For the Chipotle Aioli
- 1 cup(s)
- mayonnaise
- 1-2 tblsp
- canned chipotle peppers (see notes)
- 2
- cloves of garlic
- 1 tblsp
- chopped cilantro
- 1 tsp
- paprika
- 1/2 tsp
- salt
Directions
- Step 1
- Make the quinoa burger patties. In a large bowl, combine onion, quinoa, beans, arrowroot flour, oil, salt, pepper, garlic powder and cilantro.
- Step 2
- Mash all the ingredients together by hand. The black beans should become pasty.
- Step 3
- Form sliders into three-ounce portions.
- Step 4
- On medium heat, pan-fry or grill your patties 4-6 minutes on each side until caramelized and golden brown. Set aside.
- Step 5
- In either a food processor or a blender, mix the mayonnaise, chipotle peppers, garlic, cilantro, black pepper, cumin, paprika and salt until aioli reaches a smooth consistency. Set aside.
- Step 6
- Serve each quinoa burger over crisp lettuce, topped with chipotle aioli and avocado. Enjoy!
Notes:
The heat of the chipotle aioli can be adjusted by the amount of the canned chipotle peppers you use.
