Spinach And Feta Stuffed Pork Tenderloin

Ingredients:

  • 1 pork tenderloin (about 1.5 lbs)
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Kitchen twine

Instructions:

  1. Prepare the Pork Tenderloin: Preheat your oven to 375°F (190°C). Butterfly the pork tenderloin by making a lengthwise cut down the center, being careful not to cut all the way through. Open the tenderloin like a book and use a meat mallet to flatten it to an even thickness.
  2. Make the Filling: In a bowl, combine the chopped spinach, crumbled feta cheese, minced garlic, olive oil, dried oregano, salt, and pepper. Mix until the ingredients are well incorporated.
  3. Stuff the Tenderloin: Spread the spinach and feta mixture evenly over the opened tenderloin. Roll the tenderloin back up, starting from one long side, to enclose the filling. Secure the rolled tenderloin with kitchen twine, tying at intervals to keep the stuffing in place.
  4. Season and Sear: Season the outside of the stuffed tenderloin with salt and pepper. Heat a large ovenproof skillet over medium-high heat and add a bit of olive oil. Sear the tenderloin on all sides until it is browned, about 2-3 minutes per side.
  5. Roast to Perfection: Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Remove the tenderloin from the oven and let it rest for 5-10 minutes before slicing.
  6. Serve and Enjoy: Slice the stuffed pork tenderloin into rounds and serve it with your favorite side dishes. The savory combination of spinach and feta inside the juicy pork is sure to be a hit at your dinner table.
