Ingredients:

  • For the Filling:
    • 1 lb ground pork
    • 1 small onion, finely chopped
    • 1 tsp fresh sage, chopped
    • 1 tsp fresh thyme, chopped
    • Salt and pepper to taste
  • For the Pastry:
    • 2 1/2 cups all-purpose flour
    • 1/2 cup butter
    • 1/2 cup lard
    • 1/2 cup water
    • 1 tsp salt
    • 1 egg, beaten (for glazing)

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix the ground pork, finely chopped onion, sage, thyme, salt, and pepper until well combined. Set aside.
  2. Make the Pastry:
    • In a saucepan, melt the butter and lard in the water over low heat. Once melted, remove from heat.
    • In a large bowl, mix the flour and salt. Pour the warm butter-lard mixture into the flour and mix until it forms a dough. Allow it to cool slightly.
  3. Assemble the Pies:
    • Preheat your oven to 375°F (190°C).
    • Divide the dough into equal portions (about 6-8 pieces depending on the size you want).
    • Roll out each portion on a floured surface to about 1/8 inch thickness.
    • Using a round cutter or a glass, cut out circles of dough for the bases and slightly larger circles for the lids.
    • Press the smaller circles into a greased muffin tin or individual pie tins, ensuring the dough comes up the sides.
    • Fill each pastry case with the pork mixture, packing it down well.
    • Place the larger dough circles on top, pressing the edges to seal. Make a small hole in the center of each lid to allow steam to escape.
    • Brush the tops with beaten egg for a golden finish.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown and the filling is cooked through.
    • Let the pies cool slightly before removing them from the tins.
