  • 1 cup quinoa

  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Cook the Quinoa:
    • Rinse the quinoa under cold water.
    • In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it cool.
  2. Prepare the Mixture:
    • In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
    • Add the cooked quinoa, chopped onion, minced garlic, breadcrumbs, grated carrots, chopped cilantro, Parmesan cheese (if using), egg, cumin, paprika, salt, and pepper. Mix well until all ingredients are combined.
  3. Form the Patties:
    • Divide the mixture into 6-8 equal portions and shape each portion into a patty. If the mixture is too sticky, you can wet your hands with a little water to make it easier to handle.
  4. Cook the Burgers:
    • Heat a drizzle of olive oil in a large skillet over medium heat.
    • Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  5. Serve:
    • Serve the quinoa burgers on your favorite buns with toppings of your choice, such as lettuce, tomato, avocado, or a slice of cheese. These burgers also pair well with a side of sweet potato fries or a fresh green salad.
