Taco Casserole

Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies, undrained
- 2 cups shredded cheddar cheese
- 1 bag tortilla chips, crushed
- 1 cup sour cream
- 1 cup salsa
- Optional toppings: chopped lettuce, diced tomatoes, sliced olives, chopped cilantro
Instructions:
- Preheat your oven to 350°F (175°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Add taco seasoning to the beef according to the package instructions. Stir in the black beans, corn, and diced tomatoes with green chilies. Let the mixture simmer for a few minutes to blend the flavors.
- In a large baking dish, spread a layer of crushed tortilla chips evenly across the bottom.
- Layer half of the beef mixture over the chips, followed by a layer of cheddar cheese. Repeat these layers, finishing with a layer of cheese on top.
- Cover the casserole with aluminum foil and bake in the preheated oven for about 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving. Top with dollops of sour cream and salsa.
- Add your favorite toppings like chopped lettuce, diced tomatoes, sliced olives, or chopped cilantro for extra flavor and crunch.
