Old Fashioned Banana Cream Pie

    • Shaved chocolate or crushed nuts (optional)

Instructions:

  1. Prepare the Pie Crust:
    1. In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    2. Gradually add ice water, one tablespoon at a time, until the dough starts to come together. Form the dough into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
    3. Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges as desired.
    4. Bake the crust for 20-25 minutes or until golden brown. Let it cool completely.
  2. Make the Banana Cream Filling:
    1. In a medium saucepan, whisk together the milk, cream, sugar, cornstarch, and salt. Heat over medium heat, stirring constantly until the mixture begins to thicken and bubble.
    2. In a small bowl, whisk the egg yolks. Gradually add a few spoonfuls of the hot milk mixture to the egg yolks to temper them, then return the egg mixture to the saucepan.
    3. Continue to cook for another 2-3 minutes, stirring constantly, until the filling is thick and smooth.
    4. Remove from heat and stir in the butter and vanilla extract. Let the mixture cool slightly.
  3. Assemble the Pie:
    1. Place the sliced bananas evenly over the cooled pie crust.
    2. Pour the banana cream filling over the bananas, smoothing the top with a spatula.
    3. Refrigerate the pie for at least 4 hours, or until the filling is fully set.
  4. Top and Serve:
    1. Before serving, top the pie with whipped cream and garnish with additional banana slices and shaved chocolate or crushed nuts if desired.
