Ingredients

  • Crumbled queso fresco or cotija cheese
  • Extra cilantro or lime wedges
  • A sprinkle of chili powder

Prepare the Corn:

If using fresh corn, grill the ears until slightly charred, then cut the kernels off the cob. If using frozen corn, heat the corn in a skillet or microwave until cooked. If you want to add a smoky flavor, you can lightly char the kernels in a hot pan or grill.

Mash the Avocados:

In a large bowl, mash the avocados with a fork or potato masher, leaving some chunks for texture.
