Ensalada de Pollo (Chicken Salad) with Guava-Lime Agua Fresca

A Light and Flavorful Chicken Salad Paired with a Refreshing Guava-Lime Drink for a Perfect Meal Combination

Ingredients

For the Salad:

  • 2 cups cooked, shredded chicken
  • 1 cup finely chopped iceberg lettuce
  • 1 avocado, diced
  • ½ cucumber, peeled and chopped
  • ¼ red onion, finely diced
  • 1 celery stalk, finely chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

For the Dressing:

  • 2 tablespoons mayonnaise (optional for a creamy version)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste

Instructions for Ensalada de Pollo

  1. In a large bowl, combine the shredded chicken, lettuce, avocado, cucumber, red onion, and celery.
  2. In a small bowl, whisk together the olive oil, lime juice, mayonnaise (if using), and mustard until smooth. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve with saltine crackers or tostadas for a traditional touch.

Guava-Lime Agua Fresca Ingredients

  • 4 ripe guavas, peeled and chopped
  • 3 cups cold water
  • Juice of 2 limes
  • 3 tablespoons sugar (adjust to taste)
  • Ice cubes for serving

Instructions for Guava-Lime Agua Fresca

  1. Blend the guavas with 2 cups of water until smooth. Strain the mixture through a fine sieve to remove the seeds.
  2. Add the lime juice, sugar, and the remaining cup of water. Stir until the sugar is dissolved.
  3. Serve over ice in a tall glass.
