Ensalada de Pollo (Chicken Salad) with Guava-Lime Agua Fresca
A Light and Flavorful Chicken Salad Paired with a Refreshing Guava-Lime Drink for a Perfect Meal Combination
Ingredients
For the Salad:
- 2 cups cooked, shredded chicken
- 1 cup finely chopped iceberg lettuce
- 1 avocado, diced
- ½ cucumber, peeled and chopped
- ¼ red onion, finely diced
- 1 celery stalk, finely chopped
- Juice of 1 lime
- Salt and pepper, to taste
For the Dressing:
- 2 tablespoons mayonnaise (optional for a creamy version)
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 teaspoon Dijon mustard (optional)
- Salt and pepper, to taste
Instructions for Ensalada de Pollo
- In a large bowl, combine the shredded chicken, lettuce, avocado, cucumber, red onion, and celery.
- In a small bowl, whisk together the olive oil, lime juice, mayonnaise (if using), and mustard until smooth. Season with salt and pepper to taste.
- Pour the dressing over the salad and gently toss to combine.
- Serve with saltine crackers or tostadas for a traditional touch.
Guava-Lime Agua Fresca Ingredients
- 4 ripe guavas, peeled and chopped
- 3 cups cold water
- Juice of 2 limes
- 3 tablespoons sugar (adjust to taste)
- Ice cubes for serving
Instructions for Guava-Lime Agua Fresca
- Blend the guavas with 2 cups of water until smooth. Strain the mixture through a fine sieve to remove the seeds.
- Add the lime juice, sugar, and the remaining cup of water. Stir until the sugar is dissolved.
- Serve over ice in a tall glass.
