Mexican Mango habanero ceviche

A Perfect Blend of Sweet and Spicy

Ingredients:

  • 1 lb cooked shrimp, peeled and chopped
  • 1 ripe mango, diced
  • 1 cucumber, diced
  • ½ red onion, finely chopped
  • 1 large tomato, diced
  • 1-2 habanero peppers, finely chopped (adjust based on your spice preference)
  • ¼ cup fresh cilantro, chopped
  • ¼ cup lime juice (about 2-3 limes)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 tablespoon orange juice for extra sweetness

Directions:

Prepare the shrimp:
If using cooked shrimp, chop them into bite-sized pieces. If using raw shrimp, finely chop them and marinate in lime juice for at least 30 minutes until they become opaque (for a fully cooked ceviche).

Mix the ingredients:
In a large bowl, combine the diced mango, cucumber, red onion, tomato, and habanero. Add the chopped shrimp to the mixture.

Season the ceviche:
Drizzle the ceviche with olive oil, and stir in the lime juice and optional orange juice for added sweetness. Add salt and pepper to taste.

Garnish:
Stir in fresh cilantro and adjust the seasoning to your liking.

Chill and serve:
Refrigerate the ceviche for 15-20 minutes to allow the flavors to meld. Serve chilled with tortilla chips or crispy tostadas.
